I grew up eating plain white bread. In fact, I remember when my mom started giving me brown bread. At first I complained. Brown bread was heavier and had too much flavor. White bread was fluffy. I could squish a whole piece of white bread into a ball the size of a gum ball and eat it in one bite! Brown bread didn't do this. White bread was almost like cotton candy. It would practically melt in my mouth. I had to chew brown bread... and it had little pieces of stuff in it. Of course, if I grew up on brown bread, things would have been different. If my mom switched me from brown to white, I would have complained that the white bread didn't have any flavor. I would have pointed out that it would squish into a little gum ball size and didn't hold any food on it... that it would rip in two when I spread peanut butter on it. I would have complained that it didn't have any pieces of stuff in it like the brown bread.
I now know that most brown breads come from whole wheat bread recipes and they are usually better for me. The stuff in it is where the nutrients are. The stuff is the bran and the wheat germ part of the grain. White bread is the endosperm part of the grain. The white bread has more calories and a higher insulin response, but does not have much nutrition. The brown whole grain bread has the nutritious bran (fiber) and wheat germ still in it. The fiber lowers the insulin response making it less fattening and less likely to cause diabetes. The fiber also adds bulk to the diet making the food more satisfying with fewer calories. Furthermore, the bran and wheat germ are loaded with nutrients like the B and E vitamins that also add to the satiety of bread. The B vitamins have been referred to as the "Beauty" vitamins because they give health to the skin and therefore can improve appearance.
Let's face it - whole wheat breads are better for you. Whole wheat breads also taste great. If we were brought up eating the good food to begin with, we would have never questioned our mothers.
Now we have to ask ourselves: "Is there more?". "Is there a better bread than the brown bread?" The answer is...
probably. You see, not all brown breads are created equally. There are hundreds of different grains to choose from; some more nutritious than others. Some have more whole wheat in the bread recipe than others. Don't settle for merely brown bread. Take the next step and dig a little deeper. Your health is worth it.
