I am so in love with Rhubarb I almost can't wait until it is available at the store. It has a unique flavor much like Kiwi does. I hope you like it too. Once you make and taste this extraordinary Rhubarb Bread, you will be standing in line at the supermarket waiting for their truck to arrive to deliver it, and then you will be racing home to make this recipe.
The recipe itself is simple and easy to make, and is so versatile you can substitute any vegetable you want for the Rhubarb, if you like to play and adjust recipes like I do.
Here are the ingredients you need:
1/3 cup Butter or Margarine
2 Eggs
1 tsp Vanilla
2 tsp Baking Powder
½ tsp Salt
½ cup Chopped Pecans
1 1/4 cup Brown Sugar (I like to use white sometimes too. It depends on your taste so do experiment to see which you like the best.)
1/4 cup Milk
2 cups All Purpose Flour
½ tsp Baking Soda
1 ½ cups finely chopped Rhubarb
Directions:

Cream together the butter, eggs, vanilla, milk and sugar2. Mix well
3. In a separate bowl, sift together the flour, baking powder, salt and baking soda
4. Add the liquid ingredients to this mixture.
5. Mix well.
6. Add the Rhubarb, and mix well once again.
7. Pour batter into a lightly greased and floured loaf pan.
8. Bake in a 350 degree oven for about 40 minutes. Be sure you test with a toothpick to be certain bread is done and leave it in the oven a little longer if it isn't. Your toothpick should be dry and without many crumbs when Bread is ready.
When cool, eat alone or spread the Bread with butter. YUMMY!
